Ingredient

 

  • 2 chicken breasts
  • 1/2 Sliced Onion
  • 1 clove garlic
  • 1 red chilli (if spicy is required)
  • 1/2 tsp of Saffron Strands
  • 1 tbsp coriander chopped
  • 1 tbsp parsley chopped
  • 150 ml/5 fl oz of cooking cream
  • 4 tbsp of vegetable oil
  • A handful of spinach
  • Salt and pepper

Large frying pan
Mortar and pestle
Spoon
Tray
Fork

 

 

 

Directions

 

 

  1. Season both sides of the chicken breasts
  2. Heat 2 tbsp oil on moderate heat
  3. Brown your chicken on both sides 3 minutes on each side till almost cooked
  4. Remove chicken and place on side
  5. Using Mortar and Pestle crush the saffron into a rough powder
  6. Yous a pinch of our Saffron
  7. Now in the frying pan, fry your onions with two tbsp vegetable oil till brown
  8. Add the garlic to your onion continue to stir a little longer
  9. Add cream
  10. Add your saffron and red chilli and stair till the cream picks up the colour of saffron
  11. Add Chicken back in the pan when the cream has started to reduce and cook for another 3-4 minutes
  12. Now add your herbs
  13. Add spinach and stir well
  14. Once the cream has thickened sufficiently it is ready to serve
  15. You can serve this with pasta or rice.
