Sven Elverfeld has spent the last few years being immersed in the deconstruction and reinterpretation of classic dishes, garnishes and preparation techniques from Germany and Europe that has resulted an incredibly accurate three-star cooking that gently challenges the diner’s perception of European food. With reworking of regional dishes such as Boiled Fillet of Müritz Lamb with Frankfurt Green Sauce and Breton Sole in Modern Finkenwerder Style Elverfeld attempts to evoke the memories of his German guest’s regional roots naturally with Germanic attention to details.

The result of all the hard work has been to create a gourmet restaurant where guests can dine in style in an atmosphere of calm and tranquillity. The minimalist design ensures that nothing distracts from the haute cuisine. Blue and white stained oak walls and panelling create a feeling of warmth; accents of colour are added by art deco armchairs beautifully upholstered in silver, anthracite and russet. Photographs by Robert Mapplethorpe adorn the walls of this award-winning restaurant, their brilliance and aesthetic perfection harmonising sublimely with the exclusive atmosphere. Sven Elverfeld was born in Hanau in 1968. After only seven years at Aqua in Wolfsburg, the home of Volkswagen, he is ranked among the young generation of elite German chefs. Since Aqua opened in 2000, Sven Elverfeld has continued to develop his creative style of light cuisine.

The restaurant is best known for much celebrated breast of Etouffé pigeon with Périgord-truffle cream and spinach mousseline. For dessert, Aqua gives its own delectable interpretation of the classic Italian Tiramisu.

Other than being no 25 best restaurants in the world, it had 2 Michelin Stars in 2005 and 3 stars in 2010. In 2007: Sven Elverfeld awarded "Chef of the Year" by the gourmet magazine Der Feinschmecker.

Restaurant was built in 2000, the Ritz-Carlton Wolfsburg is a modern, semi-circular hotel located inside Autostadt, the Volkswagen theme park, and eight kilometres from Wolfsburg Castle. Situated just 60 kilometres away from Hanover International Airport, this contemporary hotel is perfect for business travel stop-overs. 

Other than being in the top 25 restaurants in the world, it had 2 Michelin Stars in 2005 and 3 stars in 2010. In 2007: Sven Elverfeld awarded "Chef of the Year" by the gourmet magazine Der Feinschmecker. Awarded with three Michelin Stars and 19 points Gault Millau for its cuisine, the discrete elegance and exclusivity of AQUA is also underlined by its design. The contemporary interior by Andrée Putman features stunning décor details such as fine coloured Art Déco armchairs and still-life flower photographs by the famous photographer Robert Mapplethorpe.

Aqua's location dictates an extremely corporate approach in cooking – the Wolfsburg Ritz-Carlton overlooks Volkswagen's Autostadt visitor attraction Also, guests at the Ritz-Carlton hotel have free entrance to the adjacent Volkswagen theme park - six acres dedicated to the history of the automobile a little rather like the Mercedes world in Weybridge, Surrey UK.

Although such location and the kind of clients it attracts, normally means a soulless, minimalist design, could-be-anywhere, 5 star hotel type fine-dining joint. However, Sven Elverfeld applies his considerable skills to peasant food, resulting in avant-garde re-workings of boiled lamb fillet with Frankfurt green sauce and beef with sour cream, gherkins and beetroot.

Aqua as we said is a minimalist and owes its fame to one and only world-class chef, Sven Elverfeld. The 39 year old German began his career as a confectioner, later progressing into the kitchen under the tutelage of Dieter Muller at the Schlosshotel Lerbach in Bergisch Gladbach, in the Black Forest. 

At Aqua, the talented chefs have created five- and seven-course gourmet menus and à la carte dishes to choose from, and diners are offered views over the waterfront and a candlelit atmosphere. 

Elsewhere in this stylish hotel, there is a day restaurant named Vision, serving European dishes with Asiatic influences. Newman's bar boasts Cuban cigars and 300 types of fruit schnapps, and also hosts live jazz and blues six nights per week.
